Heirloom BBQ Sauce

3/4 cup Gowan’s Heirloom Cider

1 tbsp butter, unsalted

3/4 cup onion, finely diced

2 tsp garlic, minced

1/2 cup marmalade

1 cup ketchup
-
1 tsp tomato paste
-
2 tbsp gluten free Worcestershire sauce

2 tbsp mustard
-
1/2c honey
-
1 habanero chile, minced

2/3 cup apple cider vinegar

Directions

In a saucepan, melt the butter in a saucepan over medium heat.

Add the onion and garlic, stirring until the onions soften and are almost translucent, about 5 minutes.

Stir in the hard cider, marmalade, ketchup, tomato paste, Worcestershire sauce, mustard, honey, and habanero, then bring to a simmer over low heat.

Cook until the sauce has thickened slightly, about 15 minutes.

Simmer over low heat until thick and glossy, about 20 minutes.

Add the apple cider vinegar. Cook for another 5 minutes to make mop sauce (liquid should be fairly tart and thin in consistency), or another 25 to 30 minutes for barbecue sauce.

Add any extra seasonings to taste. Use immediately or store in a sealed container in the fridge for up to two days.
