Cider-Pomegranate Sorbet

2 and 1/4 cups of soft apple cider

1 cup pomegranate juice

2/3 cup granulated sugar

1/4 tsp ground cinnamon

1/8 tsp ground allspice or nutmeg

1 tbsp freshly squeezed lemon juice

1 small dash of salt

Directions

In a medium saucepan over high heat, bring the apple cider and pomegranate juice to a boil.

Stir in the spices, sugar, and dash of salt. Boil for another 5 minutes.

Remove from heat and let cool.

Transfer to a large bowl and stir in the lemon juice.

Cover and chill in the refrigerator until cold.

Pour the mixture into the bowl of an ice cream machine and freeze according to the manufacturer's instructions. (Or simply freeze, but the churning process produces a smoother, creamier texture.)

After the sorbet is made, transfer to an airtight container. Cover tightly and freeze until ready to serve. Enjoy with fresh fruit, a garnish of mint, and a glass of Gowan's Heirloom Cider!
