Cabbage braised in Macintosh Heirloom Cider with Andouille Sausage

1 bottle (500mL) of Gowan's Macintosh Heirloom Cider

1/2 cabbage, thinly sliced

1 red onion, thinly sliced (Lyonnaise)

1 carrot, cut into sticks (batonnet)

4 Andouille sausages, pricked with a fork
-
Butter, for sautéing
-
Salt
-
Pepper
-
Splash of apple cider vinegar

Spicy mustard
Directions

In a pot over a medium heat, add butter to melt.

Add the onions and carrots, then cook until soft.

Add the cabbage and mix well.

Add the sausage, salt and pepper to taste.

Pour 1/2 of the Macintosh Heirloom Cider into the pot and bring to a boil. (Pour remaining cider into a goblet.)

Lower heat to low and simmer for 30 minutes. (While you’re waiting, take the goblet of cider outside and enjoy the sophisticated taste of our family’s heirloom apple cider.)

Remove the sausages.

Plate the braised vegetables between two plates. Put a few dashes of apple cider vinegar on the vegetables, place the sausages on top, serve with spicy mustard, and enjoy!
